- 1/2 medium onion, chopped
- 3 cloves garlic, minced
- 15 oz. can black beans, drained and rinsed
- 1 cup frozen corn
- 1/2 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp dried parsley

How to Make Easy Tex-Mex Black Bean Mix – Step by Step
Step 1. Combine onion and corn in a large nonstick pan with some olive oil, saute over medium high heat until the onion begins to brown.
Step 2. Add minced garlic and saute for 1 minute.
Step 3. Add the black beans and all spices, then toss to combine.
Step 4. Continue to saute until the skin on the black beans begins to appear wrinkled.
Step 5. Season to taste with salt and pepper.
Step 6. Remove from heat and serve.
Variations & Substitutions
If you want to add some meatiness to the mix, add 3/4 cup Morning Star Grillers® Crumbles™ to the pan along with the onion and corn in step 1.
