Tired of using tofu or plain old beans as your Mexican food protein choice? Try this easy-to-make Vegan Tex-Mex Black Bean Corn Mix with Southwestern flair. With black beans, onion, corn, garlic, and loads of delicious spices, it makes for the perfect vegan protein option to use with any of your favorite Mexican dishes!
Combine onion and corn in a large nonstick pan with some olive oil, saute over medium high heat until the onion begins to brown.
Add minced garlic and saute for 1 minute.
Add the black beans and all spices, then toss to combine.
Continue to saute until the skin on the black beans begins to appear wrinkled.
Season to taste with salt and pepper.
Remove from heat and serve.
Variations & Substitutions
If you want to add some meatiness to the mix, add 3/4 cup Morning Star Grillers® Crumbles™ to the pan along with the onion and corn in step 1.
